We only use La Ionica brand birds which are free of any added hormones and processed chemical free.

Using the premium method of “air chilling”, a process which does not involve the use of traditional spin–chillers filled with ice water and chlorine, all La Ionica chickens travel along a refrigeration line where they are chilled with cool, natural air until their deep muscle temperature is 0 degrees Celsius.

Where the spin-chiller process alters appearance, texture and taste, the air-chilling process is what ensures all La Ionica chickens maintain their healthy pink appearance, great natural texture and flavour. Along with no excess water weight.
